· We pack to order, based on estimates from our divers. Most often, we have orders in place waiting to be fulfilled so what meets our high standards for retail orders sells out FAST!
· Santa Barbara’s Giant Red Urchin populations are not what they used to be. “Wild” Uni is a delicacy that has seen increased demand with the advent of social media and the popularity of Japanese Omakase restaurants.
· Seasonally, sea urchin populations are best in the Fall and spawn in the Spring. Most divers chose not to harvest March through early May because Uni yields poor quality, off colors, and bitter flavors.
· Any bad weather, high surf, or windy conditions create dangerous conditions for divers.
