Chawanmushi (Serves 3-4)
INGREDIENTS:
Eggs 2
Dashi (Fish Soup Broth) ¾ Cup (180ml)
Chives, or herb of your choice
STEP:
1) Beat eggs until they are uniform in color and have no streaks. Sieve through and measure 60ml.
2) Take Uni Shutou and sieve it through.
3) Mix Dashi, eggs, and Uni Shutou very well. Pour the mix into heat resistant serving cups, and cover with lids or aluminum foil.
4) Prepare the steamer. Once the water is boiling and steam is coming off, place the cups inside. Put the steamer lid back on and lower the heat to medium low. Steam for 3 minutes.
5) Lower the heat to very low and keep steaming for 18 more minutes. (Steaming time may vary depending on the containers size and thickness)
6) Remove the cups from the steamer and open the lids/covers. If the egg mix looks firm and there is some clear liquid on top, it’s done. If undercooked, keep steaming until its done, checking every 2 minutes.
7) Top with ikura, fresh Uni and chives before serving.
